 Ginger Cookies

Yield: 12 servings

Time: 35 minutes

Ingredients

  • 2 tablespoons white sugar (for rolling)

  • 2 ¼ cups all-purpose flour

  • 2 teaspoons ground ginger

  • 1 teaspoon of baking soda

  • ¾ teaspoon ground cinnamon

  • ½ teaspoon ground cloves

  • ¼ teaspoon salt

  • ¾ cup butter or margarine, softened

  • 1 cup white sugar

  • 1 large egg

  • ¼ cup molasses

  • 1 tablespoon water

Instructions

  1. Start by preheating your oven to 350°F.

  2. In a small bowl, set aside 2 tablespoons of sugar for rolling the cookies later.

  3. In a separate bowl, sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. This will ensure even mixing and prevent clumps.

  4. In a large bowl, use an electric mixer to beat the softened butter and the remaining 1 cup of sugar until the mixture is light and fluffy.

  5. Add in the egg, and then stir in the molasses and water until well combined.

  6. Gradually mix the sifted dry ingredients into the molasses mixture until everything is well combined.

  7. Using floured hands, shape the dough into 12 balls. Roll each ball in the reserved sugar until fully coated.

  8. Place the cookies 2 inches apart on ungreased cookie sheets and flatten them slightly using the bottom of a glass.

  9. Bake in the preheated oven for 8 to 10 minutes, switching the baking sheets between the top and bottom racks halfway through to ensure even baking.

  10. Once baked, remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
